Rainbow Breakfast

Make a trip to the farmer's market or your garden (depending on whether you depend on a job or your land for sustenance).
You'll need some colorful heirloom tomatoes and purple potatoes, zucchini, onions, swiss chard, and peppers of varying hotness.
In a cast iron skillet with some of your favorite fat (the absolute best is the rendered fat from organic and pasture fed bacon you cooked last night for BLT's) Fry up the purple potatoes, when they are halfway soft, throw in the onion, next the pepper(s), then zucchini. Saute a couple minutes, add some orange and red and green heirloom tomatoes, chopped swiss chard, and cook a bit til everything is tender, add some eggs, beaten, and eat with cheese on top. I like to spice mine up with some cumin and garlic when it's still cooking, and some fresh basil.
Repeat everyday until these vegetables aren't available anymore and you're sick of it anyway. Wait until next year in august and do it again!
